Goodbye Lauren, Hello Zucchini! August 14 2018 News

It’s a mixed bag of feelings on the farm this week. While the season is reaching it’s peak bounty, we the farm squad are bidding fair well to one of our own. A true champion at weeding and an all around delight, Lauren, you will be missed! Good luck at school!
This week on the farm we are enjoying the late summer abundance- and yes, that means Zucchini! But, rest assured because a wise woman once told us that, “you can sneak zucchini into anything!” And boy is she right. We know that this is the time of year where the farm produces more than we can eat, which is why we have a few tips on how you can preserve your harvest well into those winter months. Apart from your standard pickling, you can also freeze, ferment or dehydrate those scrumptious squash (and this goes for most of the crops you will get this season!). Get creative on those rainy days, and if you already have a great recipe, share it with the farm! We love hearing about what you all are doing with our produce to make your share last.
And now, on to the harvest!
